Irresistibly easy cake with quick frosting, vanish in no time at home.
Ingredients:
  • 2 cups white sugar
  • 2 cups all-purpose flour
  • 0.5 cup butter
  • 0.5 cup vegetable oil
  • 1 cup water
  • 0.25 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 cup buttermilk
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.25 cup milk
  • 4 cups confectioners' sugar
  • 1 cup chopped pecans
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a 9 x 13 inch pan by greasing and flouring it.
  • Combine 2 cups of white sugar and 2 cups of flour, sifting them together; then set aside.
  • In a saucepan, melt 1/2 cup butter or margarine with oil, water, and 1/4 cup cocoa until it comes to a boil. Remove from heat and stir into dry ingredients.
  • Combine the baking soda with the buttermilk and mix until dissolved. Add this mixture along with the eggs, salt, cinnamon, and 1 teaspoon of vanilla to the cocoa and flour mixture. Stir everything together until well combined.
  • Transfer the batter into a 9 x 13 inch pan and bake at 375°F (190°C) for 20 minutes.
  • Five minutes before the cake is done, in a saucepan, bring 1/2 cup of butter, 1/4 cup of cocoa, and 1/4 cup of milk to a boil to make the frosting.
  • Take the mixture off the heat and gently mix in confectioners' sugar, 1 teaspoon of vanilla extract, and chopped pecans. Drizzle the frosting over the warm cake. The cake stays moist and can be frozen for later. This recipe serves 20 people.
