Best Chocolate Cake with Fudge Frosting

Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup shortening
  • 3/4 cup buttermilk
  • 1 teaspoon vanilla
  • 4 oz unsweetened baking chocolate, melted, cooled
  • 3 oz unsweetened baking chocolate
  • 2/3 cup milk
  • 2 teaspoons vanilla
Instructions:
  • Preheat your oven to 350°F. Prepare your desired pans by greasing and flouring them. In a large bowl, mix all cake ingredients using an electric mixer on low for 30 seconds, remember to scrape the bowl. Then, beat on high for 3 minutes, occasionally scraping the bowl. Pour the batter into the pan(s).
  • Bake the rectangle for 40-45 minutes and the rounds for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the rectangle cool in the pan on a rack, then cool the rounds for 10 minutes before removing from the pans to cool on a rack until completely cooled.
  • In a 2 1/2-quart saucepan, combine all frosting ingredients except vanilla. Bring to a rolling boil, stirring occasionally. Boil for 1 minute without stirring. Place the saucepan in a bowl of ice water. Beat until the frosting is smooth and spreadable, then mix in the vanilla. Use to frost a rectangle cake or to fill and frost layers.
