Garlic and rosemary seasoned lamb chops, roasted to juicy perfection in under 30 minutes.
Ingredients:
  • 4 (4 ounce) lamb chops
  • 1 tablespoon olive oil, or as needed
  • 1 clove garlic, minced
  • 0.5 tablespoon crushed fresh rosemary leaves
  • sea salt and freshly ground black pepper to taste
  • 0.25 cup mint jelly
Instructions:
  • Preheat the oven to a toasty 425°F (220°C).
  • Trim any excess fat from the lamb chops, leaving some for added flavor. Gently coat each chop with a drizzle of olive oil, then season with garlic, rosemary, salt, and pepper before placing them in a cast iron skillet.
  • Bake in a preheated oven until cooked through, about 8 to 10 minutes. Ensure the center reaches at least 140 degrees F (60 degrees C) using an instant-read thermometer for medium-well doneness.
  • Take out of the oven and tightly cover with foil, allowing it to rest for 8 to 10 minutes. Serve with a side of mint jelly.
