Refreshing summer salad, easy and delicious, ideal for lunch or BBQ.
Ingredients:
  • 310 g small shell-shaped pasta
  • 3 cloves garlic
  • 255 g yellow cherry tomatoes
  • 255 g red cherry tomatoes
  • 1 handful black olives pitted
  • 2 tablespoons fresh chives
  • 1 handful fresh basil
  • ½ cucumber
  • 4 tablespoons white wine vinegar or to taste
  • 7 tablespoons extra virgin olive oil
  • sea salt
  • freshly ground black pepper
Instructions:
  • Start by bringing a large pot of salted water to a boil. Add the pasta and whole cloves of garlic, cook until al dente. Drain the pasta and garlic, then rinse under cold water to cool. Set aside the garlic for the dressing. Transfer the pasta to a large bowl. Roughly chop the tomatoes, olives, chives, basil, and cucumber into smaller pieces than the pasta and mix them in. Peel the garlic, and mash it in a mortar and pestle. Mix in the vinegar, oil, and seasoning. Drizzle the dressing over the salad, adjusting the seasoning to taste.
