Authentic Thai coconut soup bursting with bold flavors like red curry, lemongrass, shrimp, and fish sauce.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 tablespoons grated fresh ginger
  • 2 teaspoons red curry paste
  • 1 stalk lemon grass, minced
  • 4 cups chicken broth
  • 3 tablespoons fish sauce
  • 1 tablespoon light brown sugar
  • 3 (13.5 ounce) cans coconut milk
  • 0.5 pound fresh shiitake mushrooms, sliced
  • 1 pound medium shrimp - peeled and deveined
  • 2 tablespoons fresh lime juice
  • salt to taste
Instructions:
  • Prepare and assemble all ingredients.
  • In a large pot over medium heat, sauté ginger, curry paste, and lemongrass in hot oil for 1 minute.
  • Slowly incorporate the chicken broth, followed by the fish sauce and brown sugar. Lower the heat and let it simmer for 15 minutes.
  • Pour in velvety coconut milk and add earthy mushrooms. Continuously cook and stir until the mushrooms are tender, approximately 5 minutes.
  • Cook shrimp until they turn opaque, which should take around 5 minutes. Mix in lime juice, add salt to taste, and top with fresh cilantro for a pop of flavor.
