The best vegan burger

Flavorful vegan corn burgers - wholesome and deliciously satisfying.
Ingredients:
  • 1 x 400 g tin of chickpeas
  • 1 x 340 g tin of sweetcorn
  • ½ a bunch of fresh coriander (15g)
  • ½ teaspoon paprika
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • 1 lemon
  • 3 heaped tablespoons plain flour plus extra for dusting
  • rapeseed oil
  • 1 small round lettuce
  • 2 large ripe tomatoes
  • tomato ketchup
  • 4 wholemeal burger buns
Instructions:
  • Drain chickpeas and sweetcorn, then combine in a food processor with coriander leaves and stalks, spices, flour, salt, and lemon zest. Pulse until slightly chunky. Shape mixture into 4 patties and chill for 30 minutes. Fry patties until golden and cooked through. Assemble burgers by placing ketchup on bun base, adding patties, tomatoes, lettuce, more coriander leaves, and bun tops. Serve with a side salad. Enjoy!
