Award-winning Best Roast Potatoes, FODMAP-friendly for a blissful Low FODMAP diet.
Ingredients:
  • 1kg Coliban or Sebago potatoes
  • 36.40 gm olive oil
  • Salt flakes, to season
Instructions:
  • Preheat oven to 200°C (180C fan-forced) while you peel and cut potatoes into 5cm chunks before placing them in a large saucepan and covering with cold water.
  • Bring the mixture to a boil over medium-high heat. Lower the heat to medium and simmer for 5-10 minutes until the potatoes are just tender when pierced with a skewer.
  • Pat potatoes dry thoroughly. Warm them in the saucepan over low heat to ensure any excess moisture evaporates. Roughen up the potato surface by shaking the saucepan vigorously or using a fork to create a crispy texture.
  • Prepare the large roasting pan by heating oil in the oven for 5 minutes until hot. Carefully add the potatoes to the sizzling oil, turning them with tongs to evenly coat, then put the pan back into the oven.
  • Roast potatoes for 40 minutes, then turn and roast for another 30 minutes until golden and crisp. Finish with a sprinkle of salt and serve promptly.
