The best roast turkey - Christmas or any time

Elevate your Sunday roast with a succulent turkey, perfect for any occasion.
Ingredients:
  • 1 sprig of fresh sage
  • 12 strips higher-welfare pancetta or thinly sliced streaky bacon
  • 1 bulb garlic
  • 4 medium red onions
  • 2 sticks celery
  • 1 big handful of breadcrumbs
  • 1 handful of dried apricots
  • 300 g higher-welfare minced pork
  • 1 lemon
  • 1 pinch of grated nutmeg
  • 1 large free-range egg
  • 12 small sprigs of fresh rosemary plus a few extra
  • 4-4.5 kg higher-welfare turkey at room temperature
  • 2 carrots
  • 1 large orange
  • 2 tablespoons plain flour
  • 1.1 litres organic chicken or vegetable stock
Instructions:
  • 1. Preheat the oven to the highest setting. 2. Heat a saucepan over medium heat and add a splash of olive oil. Cook sage leaves and 6 strips of pancetta or bacon. Add chopped garlic, onion, and celery. Cook until soft and golden brown. Remove from heat and stir in breadcrumbs and chopped apricots. Let cool, then add pork, lemon zest, nutmeg, egg, salt, and pepper. Mix well. 3. Cut remaining pancetta or bacon strips in half. Slice a peeled garlic clove into thin slivers. Place a rosemary sprig and garlic sliver on each halved pancetta strip and roll tightly into 12 rolls. Make 6 holes on each side of the turkey thighs and drumsticks. Insert a pancetta roll into each hole. 4. Halve and peel remaining onions, thickly slice carrots. Wipe turkey inside and out. Carefully separate skin from breast meat and stuff the stuffing between the skin and breast. Place a warmed orange in the cavity. Calculate cooking time based on weight. 5. Rub the turkey with olive oil, season, and place in a roasting tray with carrots, onions, and garlic cloves. Cover with foil and roast in the oven at 180°C/350°F/gas 4 for calculated time. Remove foil for the last 45 minutes to brown. 6. Rest the turkey on a board covered with foil for at least 1 hour. Skim fat from the tray, add flour and stock, bring to a boil on the stove to make gravy. Strain and serve with carved turkey. Enjoy!
