Enhance turkey with clementines and herbs for delicious, aromatic taste.
Ingredients:
  • 6.5-8 kg higher-welfare turkey
  • flavoured butter
  • 2-4 clementines
  • a few sprigs of fresh herbs
  • 1 sprig of fresh rosemary
  • 2-3 carrots
  • 3 onions peeled
  • 2 sticks celery
Instructions:
  • Choose a 6.5kg–8kg turkey for a good size that feeds about 10 to 14 people and a better flavor. Prepare a flavored butter by gently working it under the turkey skin, both on the breast and on the outside. Add herb stalks in the cavity for more flavor. Refrigerate the turkey covered in cling film overnight. Before cooking, let the turkey sit out to reach room temperature. Fill the cavity with halved clementines and fresh herbs like rosemary, bay, and thyme. Secure the herbs under the skin around the cavity. Stuff the neck cavity with stuffing, tuck the skin under, and place in a roasting tray. Preheat the oven to 180ºC/350ºF/gas 4. Roast the turkey, covered with foil, for about 35 to 40 minutes per kilogram. Baste the turkey every 30 minutes and remove foil after 3.5 hours. Check doneness with a meat thermometer. Let the turkey rest covered for at least 1 hour, preferably 2 hours for larger birds before serving.
