Ultimate turkey gravy, perfect for Thanksgiving, made with rich homemade turkey stock to elevate your potatoes and stuffing.
Ingredients:
  • 1.25 pounds giblets and neck from turkey
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 (1.2 ounce) packages dry turkey gravy mix
  • 1 pinch ground white pepper, or to taste
  • 3 (14.5 ounce) cans chicken broth, or more as needed
  • 1.75 cups turkey drippings
  • 0.25 cup quick-mixing flour (such as Wondra®)
  • 0.5 cup milk, or as needed
Instructions:
  • In a large saucepan, combine giblets, turkey neck, onion, celery, turkey gravy mix, and white pepper. Cover with chicken broth, bring to a gentle simmer over medium-low heat, and cook for 30 minutes.
  • Remove the turkey liver and set it aside. Let the stock simmer for an additional 2 1/2 hours.
  • Chop giblets and liver; set aside. Strain stock into a liquid measure, ensuring you have about 3 cups; add more chicken broth if needed. Transfer stock to a saucepan and discard turkey neck and vegetables.
  • After roasting the turkey, pour the pan drippings into a bowl or fat separator. Remove the fat layer. Whisk quick-mixing flour into the drippings until smooth, then add this mixture to the stock in the saucepan. Simmer the gravy over medium heat, whisking continually. Mix in chopped giblets, then gradually stir in milk to reach your preferred consistency.
