Farm-fresh frittata with bacon, bursting with veggies - perfect for any meal!
Ingredients:
  • 2.5 cups cubed zucchini
  • 2.5 cups cubed yellow summer squash
  • 2 tablespoons kosher salt
  • 2 tablespoons olive oil, divided
  • 1 slice thick-cut bacon, cut crosswise into 1/4-inch strips
  • 8 large eggs
  • 0.25 teaspoon kosher salt, or to taste
  • freshly ground black pepper to taste
  • 1 pinch cayenne pepper
  • 2 tablespoons sliced green onions, or to taste
  • 0.33333334326744 cup diced red onion
  • 1 cup diced sweet peppers
  • 2 ounces grated sharp Cheddar cheese
  • 4 ounces goat cheese, crumbled
Instructions:
  • In a bowl, toss together zucchini, summer squash, and 2 tablespoons of kosher salt until evenly coated. Allow the mixture to sit for 15 minutes, tossing occasionally.
  • Rinse the squash well under cold water to wash away the salt, then allow it to drain in a colander for 15 minutes.
  • In a 10-inch oven-proof skillet over medium heat, sizzle 1 tablespoon of olive oil. Cook the bacon until golden and nearly crunchy, about 5 minutes.
  • Combine eggs, 1/4 teaspoon kosher salt, black pepper, cayenne, and green onions in a large bowl, using a fork, while the bacon is cooking.
  • Increase the heat to medium-high under the bacon, then add peppers and red onion along with a pinch of salt. Sauté until the peppers slightly soften and the onions become translucent, approximately 3 minutes. Introduce the drained squash, gently combine everything, and cook until the squash is just tender, about 5 minutes.
  • Position an oven rack approximately 6 inches from the heat source and preheat the broiler.
  • Add Cheddar cheese to the skillet and pour in the egg mixture. Stir with a spatula as if making scrambled eggs until it thickens in 30 to 45 seconds. Gently shake the pan to even out the contents and turn off the heat. Press down the edges with the spatula, sprinkle goat cheese on top, and drizzle with the remaining 1 tablespoon of olive oil.
  • Broil until the top is golden brown and the frittata is set, for about 2 to 3 minutes.
  • Garnish with extra green onions and allow to cool for 5 minutes before transferring to a serving plate.
