Irish-inspired Shepherd's Pie with a twist of Italian flavors for a delicious and unique meal.
Ingredients:
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 pound bulk Italian sausage
  • 2 tablespoons sausage drippings
  • 2 tablespoons margarine
  • 2 apples, cored and sliced
  • 1 large onion, sliced
  • 1 teaspoon dried oregano
  • 1 tablespoon all-purpose flour
  • 3 cups prepared mashed potatoes
  • 1 tablespoon melted margarine
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect baking temperature.
  • Prepare a 2-quart casserole dish by greasing it.
  • In a skillet over medium heat, sizzle Italian sausage in olive oil until perfectly browned and crumbly, approximately 10 minutes. With a slotted spoon, move the sausage to a casserole dish. Save 2 tablespoons of drippings in the skillet after draining the excess.
  • In a skillet over medium heat, melt 2 tablespoons of margarine. Sauté apple and onion slices until tender, about 8 minutes. Add the cooked apples and onions to the casserole dish with the sausage.
  • Gently combine sausage, apple, and onion; season with salt, black pepper, and oregano.
  • In the skillet with reserved drippings, cook flour until golden brown over medium heat. Gradually whisk in water until a thick gravy forms, about 3 minutes.
  • Drizzle gravy over sausage in the casserole, top with mashed potatoes using a spoon to create peaks, and lightly brush with 1 tablespoon melted margarine.
  • Roast in the oven until the potatoes are golden and the sausage mixture is bubbly, approximately 30 minutes.
