Indulge in a gourmet cheese-stuffed burger topped with fresh tomato and avocado, perfect for a luxurious end-of-summer meal for two.
Ingredients:
  • 6 slices bacon
  • 1 tablespoon bacon drippings
  • 1 pound ground beef
  • 1 cup dry bread crumbs
  • 1 tablespoon red pepper flakes
  • 1 pinch freshly ground black pepper
  • 0.5 cup shredded Colby-Jack cheese, or more to taste

  • 2 slices Colby-Jack cheese
  • 2 thin tomato slices
  • 2 slices avocado
  • 2 hamburger buns, split
Instructions:
  • In a large skillet over medium-high heat, cook the bacon until evenly browned but not fully crisp, about 8 minutes. Transfer to paper towels to drain. Keep 1 tablespoon of bacon drippings.
  • Combine ground beef, bread crumbs, red pepper flakes, black pepper, and reserved bacon drippings in a bowl; mix well. Divide the mixture into 4 equal parts and shape each part into a thin patty. Sprinkle Colby-Jack cheese on 2 patties, leaving a 3/4-inch border. Top with the remaining patties and seal the edges to form 2 cheese-stuffed burgers. Chill in the freezer for about 10 minutes.
  • Heat up the outdoor grill on high.
  • Prep the grill grate with cooking spray and grill the burgers over low heat with the lid on until lightly charred and cheese melts, flipping once, about 10 minutes per side. Maintain grill at 300°F (150°C) and use water spray bottle to manage flames. Add 3 partially-cooked bacon slices to each burger after the first flip.
  • Just before the burgers are cooked, add a slice of Colby-Jack cheese on each patty. Top with fresh tomato and avocado slices, then transfer the burgers to a plate to rest for 1 to 2 minutes. Serve the delicious burgers on hamburger buns.
