Indulge in the timeless delight of Beigli, a cherished walnut roll passed down through generations. A labor of love, but the exquisite outcome makes it all worthwhile.
Ingredients:
  • 5 tablespoons white sugar
  • 1 cup unsalted butter, cubed
  • 3 egg yolks
  • 1 (8 ounce) container sour cream
  • 4 cups self-rising flour
  • 1 (.25 ounce) package active dry yeast
  • 1 cup whole milk
  • 2.5 cups finely chopped walnuts
  • 1 lemon, zested
  • 0.66666668653488 cup golden raisins
Instructions:
  • In a food processor with the dough blade, blend 5 tablespoons sugar, butter, egg yolks, and sour cream until smooth. Add flour and yeast; pulse until dough forms. Adjust consistency as needed: sprinkle more flour if wet, or add milk, one tablespoon at a time, if dry. Aim for a moist, pliable dough.
  • Gather the dough into a smooth ball, cover it with a damp towel, and set it aside. For the filling, heat milk and 1 cup sugar in a saucepan until the sugar dissolves and the mixture thickens. Mix in the chopped walnuts, then take the saucepan off the heat. Stir in the lemon zest and raisins, and let the filling cool.
  • Divide the dough into three pieces. Roll out one piece of dough on a lightly floured surface to create a long 1/4-inch thick rectangle. Cover the remaining dough. Spread 1/3 of the walnut filling over the dough, making sure to leave a 1-inch border. Roll the dough into a log shape, sealing it by pressing gently. Arrange the dough seam-side down on a baking sheet lined with parchment paper. Repeat the process with the remaining dough and filling.
  • Create an egg wash by whisking an egg with a tablespoon of water. Brush the loaves with the egg wash and allow them to rest for 1 hour in a warm place. Once the dough has risen, brush it again with the egg wash and refrigerate the baking tray for 30 minutes to give the dough a shiny finish.
  • Preheat your oven to 375 degrees F (190 degrees C).
  • Bake the loaves until they achieve a rich golden brown color, approximately 35 to 45 minutes.
