Ingredients:
  • 2 cups (400g) sugar
  • 1 3/4 cups (253g) all-purpose flour
  • 3/4 cup (74g) unsweetened cocoa powder, sifted if lumpy
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup oil (a neutral oil like canola will do, but olive oil is nice, too)
  • 2 teaspoons vanilla extract
  • 1 cup fresh strong black coffee
  • 2 batches Easy Chocolate Buttercream , for frosting
Instructions:
  • Preheat the oven to 350°F, then generously grease and line two 9-inch round pans with parchment rounds.
  • In a large bowl, whisk together sugar, flour, cocoa, baking soda, baking powder, and salt. In a separate medium bowl, lightly beat the eggs, then mix in buttermilk, oil, and vanilla until combined.
  • Combine the wet and dry ingredients using a silicone spatula until a dense mixture forms (you can use a hand mixer on low if desired). Stir in the coffee until a smooth, thin batter is achieved. Note that the batter will be thinner than usual cake batter, which is perfectly fine.
  • Pour half of the batter into each of the prepared pans. Bake for about 35 minutes until the center springs back lightly when pressed. The cake may still have a few crumbs sticking to a tester when fully baked. Let the pans cool on a wire rack for 10 minutes, then flip the cakes out onto the rack to remove the paper from the bottom. Allow the layers to cool completely before frosting. Freeze the cake for up to 3 months, or keep covered at room temperature for up to 3 days.
