Versatile and delicious sweet tomato sauce perfect for pizza, pasta, meats, and fish.
Ingredients:
  • olive oil
  • 4 cloves of garlic
  • 1 bunch of fresh basil (30g)
  • 3 x 400 g tins of quality plum tomatoes
Instructions:
  • Peel and thinly slice the garlic. Tear the basil leaves into small pieces. Heat a large non-stick frying pan with 4 generous drizzles of olive oil. Add the garlic and once it lightly browns, add the basil and tomatoes. Use a wooden spoon to crush the tomatoes. Season the sauce with salt and pepper. Once it boils, remove from heat. Strain the sauce through a coarse sieve into a bowl, pressing any larger tomato bits through with the spoon. Discard the basil and garlic in the sieve, but scrape any remaining tomato bits into the bowl. Return sauce to pan, boil, then simmer for 5 minutes to intensify flavors. It should reach a pizza-spreadable consistency. Transfer to a clean jar and refrigerate – it stays fresh for up to a week.
