Thermomix gluten-free gingerbread house recipe

Make lasting memories by making a gluten-free Christmas gingerbread house with a Thermomix for the whole family to enjoy.
Ingredients:
  • Gluten free cornflour, for dusting
  • 380g gluten free flour
  • 15.00 gm ground ginger
  • 2.50 gm ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp ground cloves
  • 2.50 gm bicarbonate of soda
  • 150g unsalted butter, softened and cut into pieces
  • 1 egg yolk
  • 1/2 tsp guar gum
  • 240g pure icing sugar
  • 1 egg white
  • 2.65 gm lemon juice
Instructions:
  • Lightly dust silicone gingerbread house moulds with cornflour and set aside to create a smooth non-stick surface.
  • Combine all gingerbread ingredients in a mixing bowl and mix on high speed for 12 seconds.
  • Use a spatula to scrape down the sides of the mixing bowl, then knead the dough for 50 seconds.
  • Place the dough in a spacious bowl and cover it with plastic wrap. Chill the dough in the refrigerator for about 1 hour. Then, make sure to clean and dry the mixing bowl.
  • Preheat your oven to 170C.
  • Fill the prepared moulds halfway with dough, then bake at 170C for 23-25 minutes or until firm. Cooking time may vary based on the size and shape of your moulds.
  • Cool the mixture in the moulds for 2 hours, then move them onto a wire rack to cool and set before decorating.
  • Prepare royal icing by combining sugar, egg white, and lemon juice in a mixing bowl; then mix for 10 seconds at speed 6.
  • To adjust the icing thickness, incorporate a few extra drops of lemon juice or water, then mix for 3 seconds on speed 6 until reaching preferred consistency.
  • Prepare a piping bag with icing and use it to beautifully decorate and assemble the house on a serving plate or cake board.
  • Garnish the house according to your preferences.
