Indulge in rich and luscious chocolate-peppermint cookies!
Ingredients:
  • 2 cups bread flour
  • 1 teaspoon baking powder
  • 1.25 cups brown sugar
  • 0.25 cup white sugar
  • 0.5 teaspoon peppermint extract
  • 1 egg yolk
  • 1 (12 ounce) bag dark chocolate chips
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C), then mix flour, cocoa, baking powder, and salt in a bowl.
  • Using an electric mixer, blend together butter, shortening, brown sugar, and white sugar until smooth in a large bowl. Add the whole egg and mix until well blended. Follow by mixing in vanilla extract and peppermint extract with the egg yolk. Gently incorporate the flour mixture into the wet ingredients. Carefully fold in the chocolate chips until evenly distributed. Scoop the dough using heaping teaspoons and roll into 1/2-inch balls. Arrange the balls 2 inches apart on ungreased baking sheets.
  • Bake in the oven until the cookie edges are firm but the center is slightly soft, around 10 minutes. Let them cool on the baking sheets for 10 minutes, then transfer to a wire rack to cool completely.
