Quick and cheesy Welsh rarebit, a comforting British classic. Easy to make and perfect for a simple and satisfying meal.
Ingredients:
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon mustard powder
  • 1/4 teaspoon smoked paprika
  • 2 teaspoons Worcestershire sauce, divided (or more to taste)
  • 2/3 cup dark stout or porter, at room temperature
  • 12 ounces grated sharp cheddar cheese Please use bright orange cheddar
  • 4 thick slices sourdough or country-style bread
  • 1 large egg yolk
Instructions:
  • Prepare the rarebit sauce: Heat a small saucepan over medium heat. Melt the butter, then whisk in the flour and cook until slightly golden and fragrant, about 1 to 2 minutes. Add mustard powder, paprika, and 1 tsp Worcestershire sauce. Cook for 30 seconds. Gradually whisk in beer until the sauce is smooth and thick, about 2 minutes.
  • Gradually add the cheddar cheese while continuously whisking until all the cheese is melted and the sauce is smooth, resembling the color of milky coffee. Remove the pan from the heat and whisk in the egg yolk until a cohesive sauce forms. If the mixture appears like wet sand after adding the yolk, don't worry, it will still melt perfectly under the broiler. Set the sauce aside.
  • Toast the bread until golden on both sides using a toaster, toaster oven, air fryer, or broiler. Spread a generous layer of sauce to cover each slice completely, making sure to reach the edges for even flavor.
  • Broil the rarebits: Place on the oven rack, broil until bubbly and browned, transfer to plates. Create crosshatch pattern, sprinkle with Worcestershire sauce. Serve hot. Refrigerate extra sauce for up to 4 days. Share your feedback in the comments below!
