Caramelized pork belly and hard-boiled eggs make a festive Vietnamese dish enjoyed year-round.
Ingredients:
  • 2 pounds pork belly, trimmed
  • 2 tablespoons white sugar
  • 5 shallots, sliced
  • 3 cloves garlic, chopped
  • 3 tablespoons fish sauce
  • ground black pepper to taste
  • 13 fluid ounces coconut water
  • 6 hard-boiled eggs, peeled
Instructions:
  • Cut the pork belly into 1-inch pieces, ensuring each piece has layers of skin, fat, and meat.
  • In a large wok or pot over medium heat, melt sugar until it caramelizes into a light brown syrup, about 5 minutes. Increase the heat to high, add pork, and cook while stirring to render some of the pork fat, 3 to 5 minutes.
  • Combine shallots, garlic, fish sauce, and black pepper in the wok, stirring until pork is well-coated. Pour in coconut water and bring to a boil. Add hard-boiled eggs, then reduce heat to low, cover, and simmer for about 1 hour until pork is tender. Check occasionally and add water if needed.
  • Allow the mixture to cool for 10 minutes, then skim any fat off the top of the dish.
