Three-bean salad

Whip up a quick and healthy three bean salad to complement any meal.
Ingredients:
  • 250g green round beans, trimmed
  • 250g yellow (butter) beans, trimmed
  • 27.30 gm extra virgin olive oil
  • 31.50 gm fresh lemon juice
  • 2 x 400g cans cannellini beans, drained, rinsed
  • 2 celery sticks, trimmed, thinly sliced
  • 1/4 small red onion, thinly sliced
Instructions:
  • Boil green beans and yellow beans in salted water for 3 minutes until tender-crisp. Rinse in cold water, then drain.
  • Mix the oil and lemon juice in a small bowl.
  • Combine green beans, yellow beans, cannellini beans, celery, and onion in a large bowl. Drizzle with dressing and season generously with salt and pepper. Mix well to ensure everything is evenly coated.
