Whipped cream, berries, and cake layers make a quick and scrumptious dessert.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 1 pint (2 cups) blueberries
  • 1 pint (2 cups) raspberries
  • 1 pint (2 cups) strawberries, halved
  • 1/3 cup granulated sugar
  • 1/4 cup raspberry-flavored liqueur or cranberry-raspberry juice
  • 1 cup whipping cream
  • 2 tablespoons powdered sugar
Instructions:
  • Preheat oven to a toasty 350°F (or 325°F for a dark or nonstick pan). Follow box instructions for making and baking cake in a 13x9-inch pan. Gently slide a knife along the edges of the pan to release the cake. Let it cool entirely, approximately 1 hour.
  • In a medium bowl, delicately combine the berries, granulated sugar, and raspberry liqueur while the cake cools.
  • In a chilled large bowl, use an electric mixer on high speed to whip the whipping cream and powdered sugar until stiff peaks form.
  • Cut or tear the cake into 1-inch pieces. Layer half of the cake pieces in a 3-quart glass trifle bowl. Spoon half of the berry mixture over the cake, then add half of the whipped cream. Repeat the layers. Chill in the refrigerator for at least 1 hour before serving. Optionally, garnish with extra berries. Store covered in the refrigerator for up to 12 hours.
