Three-Layer Oreo Cheesecake

Indulgent 3-layer Oreo cheesecake slices that will wow any cheesecake lover.
Ingredients:
  • 2 (14 ounce) packages chocolate sandwich cookies (such as Oreo®)
  • 0.25 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sour cream
  • 4 large eggs
  • 4 (1 ounce) squares semi-sweet chocolate, melted
Instructions:
  • Preheat your oven to 325°F (165°C).
  • Place 30 whole cookies in a food processor and process until finely ground. Crush 16 cookies separately in a bowl and set aside any extras for future use.
  • Combine ground cookies with rich melted butter until thoroughly mixed. Firmly press mixture into a 10-inch springform pan.
  • Using an electric mixer, blend cream cheese, sugar, and vanilla in a large bowl until smooth. Mix in sour cream, then add eggs one at a time until just combined. Transfer half of the batter to a separate bowl and gently stir in 16 crushed cookies. Pour the cookie batter over the crust.
  • Separate the remaining batter into two portions. Mix in the melted chocolate into one portion and spread it over the cookie batter. Finally, layer the plain batter on top.
  • Bake the cheesecake in the preheated oven for about 45 minutes until the surface is firm with a slight jiggle in the center. Run a knife around the edges, cool on a wire rack for about an hour at room temperature, then chill in the fridge for 4 hours to overnight.
