Decant red wine before cooking for a perfectly paired meal.
Ingredients:
  • 40.00 ml plain flour
  • 4 chicken marylands
  • 1 red onion, halved, cut into thick wedges
  • 4 garlic cloves, thinly sliced
  • 185ml (3/4 cup) chicken style liquid stock
  • 185ml (3/4 cup) white wine
  • 8 sprigs fresh thyme
  • 1 lemon, thickly sliced
  • 85g (1/2 cup) green olives
  • Fresh thyme leaves, to serve
  • Mashed potato, to serve
Instructions:
  • Preheat your oven to 180°C. Season a large plate of flour with salt and pepper. Coat the chicken in the seasoned flour and shake off any excess.
  • In a large frying pan over medium-high heat, heat up the oil until shimmering. Cook the chicken for 3-4 minutes on each side until beautifully golden. Transfer the chicken to a 3L (12-cup) ovenproof dish.
  • - Sauté the onion in the frying pan until soft, for about 5 minutes. Then add the garlic and cook until aromatic, around 1 minute. - Pour in the stock and wine, bring to a boil. - Pour the flavorful stock over the chicken in the dish. - Arrange thyme, lemon, and olives on top of the chicken.
  • Bake covered in the oven for 1 hour, or until the chicken is tender.
  • Divide the mashed potato evenly among the serving plates, then generously spoon the chicken mixture over the top before serving.
