Dairy-free meatballs made with soy milk, oats, and a simple Parmesan alternative.
Ingredients:
  • 0.75 teaspoon sea salt
  • 2 tablespoons extra-virgin olive oil, or more as needed
  • 0.5 cup old-fashioned oats
  • 1 pound ground turkey
  • 1 large egg, lightly beaten
  • 0.25 cup non-dairy Parmesan cheese substitute
  • 1 tablespoon parsley flakes
  • 0.25 teaspoon ground nutmeg
  • coarsely ground black pepper to taste
Instructions:
  • Preheat the oven to 450°F (230°C) and drizzle olive oil on a rimmed baking sheet.
  • In a small saucepan, gently simmer milk and oats until the mixture thickens to oatmeal consistency, about 3 to 5 minutes. Remove from heat and allow to cool for 5 minutes before serving.
  • In a large bowl, mix together turkey, egg, Parmesan cheese substitute, parsley, garlic powder, nutmeg, and pepper. Add the cooled oatmeal mixture and stir well using a sturdy spoon or spatula. Shape the mixture into 28 meatballs and place them on the baking sheet.
  • Roast in the oven until golden brown and fully cooked, turning halfway through, for 25-30 minutes at the preset temperature.
