Ethiopian cabbage and carrot side dish, Tikil Gomen, pairs perfectly with injera bread.
Ingredients:
  • 3 tablespoons vegetable oil
  • 0.5 onion, thinly sliced lengthwise
  • 1 cup chopped carrots
  • 1 teaspoon minced garlic
  • 0.25 teaspoon ground turmeric
  • salt and ground black pepper to taste
  • 0.66666668653488 head cabbage, diced and rinsed
  • 2 tablespoons water, or as needed
Instructions:
  • - Heat oil in a pot over medium heat. - Sauté onion until translucent, around 5 minutes. - Add carrots, garlic, turmeric, salt, and black pepper; cook until flavors meld, about 7 minutes. - Mix in cabbage thoroughly.
  • Cover the pot and simmer on medium-low heat until the cabbage is tender but not fully soft, for approximately 20 minutes. Adjust by adding water if vegetables seem dry.
