TikTok Shrimp Sushi Bake Cups

Make easy and delicious shrimp sushi cups using nori, rice, shrimp, Kewpie mayo, and sriracha baked in a muffin tin, as seen on TikTok.
Ingredients:
  • cooking spray
  • 3 sheets nori (dry seaweed), quartered
  • 1.5 cups warm cooked sushi rice
  • 1 teaspoon seasoned rice vinegar
  • 0.333 cup Japanese mayonnaise (such as Kewpie®)
  • 1 tablespoon Sriracha chile sauce
  • 1 tablespoon seasoned rice vinegar
  • 1 tablespoon soy sauce
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 0.333 cup seasoned panko bread crumbs
  • 1 tablespoon canola oil
  • 0.5 tablespoon white sesame seeds, toasted
  • 0.5 tablespoon black sesame seeds
  • 2 tablespoons thinly sliced scallions
  • 0.5 avocado, finely chopped
Instructions:
  • Preheat the oven to 400°F (200°C) while lightly greasing a muffin tin with cooking spray.
  • Spread the warm rice on a baking sheet, ensuring an even layer, and gently sprinkle with 1 teaspoon of rice vinegar to enhance the flavor.
  • Combine mayonnaise, Sriracha, and the remaining tablespoon of rice vinegar in a medium bowl until well mixed. Set aside 1/4 cup of the mixture in a small bowl for later use.
  • Combine the soy sauce with the remaining mayonnaise mixture in a medium bowl, then mix in the shrimp until evenly coated.
  • Take a nori square and place it into each muffin cup. Use damp hands to separate the rice grains on a baking sheet. Add approximately 2 1/2 tablespoons of rice on top of each nori square and press it into the bottom of the muffin cup. Finally, place about 3 shrimp on top of the rice, leaving out any extra mayonnaise mixture.
  • Combine panko and canola oil in a bowl. Bake shrimp cups in a preheated oven for 8 minutes, then sprinkle with a generous amount of the panko mixture. Continue baking until shrimp are fully cooked and panko is golden, about 6 to 7 minutes more.
  • Remove cups from muffin tin with care, transfer to a platter. Drizzle with reserved mayo mixture, sprinkle with white and black sesame seeds, scallions, and top with avocado. Serve immediately while hot.
