TikTok-inspired ciabatta sandwich with Italian meats, cheeses, and zesty salad.
Ingredients:
  • 2 ciabatta rolls, sliced in half
  • 5 thin slices provolone cheese
  • 4 thin slices deli turkey
  • 4 thin slices deli ham
  • 4 thin slices soppressata
  • 4 thin slices prosciutto
  • 16 slices mini pepperoni
  • 0.25 cup grated Parmesan cheese, or to taste
  • 1 medium tomato, thinly sliced
  • 1 drizzle olive oil, or to taste
  • salt and freshly ground black pepper to taste
  • 0.5 cup mayonnaise
  • 1 teaspoon red wine vinegar, or more to taste
  • 1 clove garlic, grated
  • 1 teaspoon dried oregano
  • 0.125 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 1 pinch red pepper flakes, or to taste
  • 0.25 head iceberg lettuce, shredded
  • 0.5 medium red onion, thinly sliced
  • 0.25 cup sliced pepperoncini peppers, drained
Instructions:
  • Preheat the oven to 375°F (190°C) and prepare a baking sheet with foil or parchment paper.
  • Lay the sliced rolls on the baking sheet. If the top half wobbles too much, trim a small piece off. Top each slice with 1 provolone slice, tearing up the extra to fill any open areas.
  • Bake in the preheated oven for just 8 minutes until melted, making sure not to brown. Remove from oven, keeping it on.
  • Layer two slices of bread with turkey and the other two slices with ham.
  • Arrange 2 slices of soppressata over the turkey. Top the ham with 2 slices of prosciutto. Add 4 pieces of pepperoni on each side of the bread.
  • Top slices generously with Parmesan cheese, then return to oven and bake until pepperoni is crispy, approximately 12 minutes.
  • As the slices bake, prepare the grinder salad by combining mayonnaise, red wine vinegar, garlic, oregano, salt, pepper, and pepper flakes in a bowl. Whisk until well combined.
  • Toss lettuce, onion, and pepperoncinis in the dressing until evenly coated.
  • Take out the sandwiches from the oven. Place tomato slices on 2 ciabatta slices. Add salad on top of the tomatoes using tongs. Sprinkle with extra Parmesan cheese.
  • Layer the non-salad slices over the salad slices, then slice each sandwich in half before serving.
