Ciabatta-Sausage Stuffing

Enhance ciabatta and sausage stuffing with flavorful Progresso® chicken broth for a delicious twist on a classic side dish.
Ingredients:
  • 1 large loaf ciabatta bread (1 lb), cut into 1-inch cubes (8 cups)
  • 1 lb bulk maple-flavored pork sausage
  • 1/4 cup butter or margarine
  • 1 1/2 cups chopped onions
  • 1 1/2 cups chopped peeled apples
  • 1 cup chopped celery
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh sage leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 to 2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
Instructions:
  • Preheat the oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Spread the bread cubes on a large cookie sheet without greasing. Bake for 20 minutes, stirring occasionally, until they are dry and lightly golden. Allow to cool for 15 minutes.
  • In a 12-inch skillet, cook sausage over medium heat for 6 to 8 minutes until no longer pink. Remove sausage using a slotted spoon. Add 2 tablespoons of butter to the skillet drippings and sauté onions, apples, and celery for 15 minutes until tender, stirring occasionally. Remove from heat.
  • Combine the apple mixture, parsley, sage, salt, pepper, sausage, and bread cubes in a large bowl. Pour in 2 cups of broth and add an additional 1/2 cup if the mixture seems dry. Transfer the stuffing to a baking dish and top with the remaining 2 tablespoons of butter.
  • Bake without covering for 40-45 minutes until golden brown.
