Recreate gourmet ciabatta bread at home with just six simple ingredients.
Ingredients:
  • 1/4 teaspoon regular active dry yeast
  • 1/2 cup water
  • 1 cup Gold Medal™ Better for Bread™ flour
  • 3/4 cup water
  • 2 teaspoons olive or vegetable oil
  • 2 1/4 cups Gold Medal™ Better for Bread™ flour
  • 3/4 teaspoon regular active dry yeast
  • 1 1/2 teaspoons salt
  • Cornmeal
Instructions:
  • Combine starter ingredients in a small bowl until fully mixed. Cover with plastic wrap and let sit at room temperature for 12 to 24 hours.
  • Combine starter and all bread ingredients, except cornmeal, in a large bowl. Use a heavy-duty electric mixer with a dough hook on medium speed for 4 minutes, or a food processor fitted with a metal blade for 1 minute, until a very sticky dough forms.
  • Grease a medium bowl with shortening or cooking spray. Place the dough in the bowl, ensuring all sides are coated with the grease. Loosely cover the bowl with plastic wrap and allow the dough to rise at room temperature until doubled in size (about 1 hour and 30 minutes). The dough is ready if an indentation remains when touched. Gently deflate the dough using a rubber spatula, then cover it again with plastic wrap and let it rise for another hour.
  • Divide dough in half on a floured surface and shape each half into a 10x4-inch rectangle. Sprinkle cornmeal on a large cookie sheet and place the loaves 3 inches apart. Mist the tops of the loaves with water using a spray bottle, cover loosely with plastic wrap, and let rise for 1.5 to 2 hours until almost doubled in size.
  • Preheat the oven to 425°F. Spritz the tops of the loaves with cool water using a spray bottle. Bake for 18 to 22 minutes until the loaves sound hollow when tapped. Transfer to a cooling rack after baking and let cool completely for about 1 hour.
