Elegant and light salad perfect for a starter or midday meal.
Ingredients:
  • 1/4 loaf ciabatta bread, cut into 2cm cubes
  • 18.20 gm olive oil
  • 2 (125g each) chorizo sausages, thickly sliced
  • 1 cos lettuce, trimmed, leaves separated, torn
  • 4 hard-boiled eggs, quartered
  • 131.25 gm caesar dressing
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Place the bread on a baking tray lined with baking paper, drizzle with oil, and toss to coat evenly. Bake for 10 to 12 minutes, flipping halfway through, until the bread is golden and crisp.
  • 1. Preheat a frying pan over medium-high heat, then add the chorizo. Cook until crisp, about 4 to 5 minutes. Transfer to a plate lined with paper towel.
  • Arrange a bed of crisp lettuce, sliced boiled egg, savory chorizo, and crusty bread on individual plates. Finish with a generous drizzle of dressing and serve immediately.
