Golden yolk rivers, sweet onions, and smoky chorizo create a heavenly dish.
Ingredients:
  • 4 red onions, thinly sliced
  • 20.00 gm raw caster sugar
  • 60g baby spinach leaves
  • 250g chorizo
  • 1 sheet frozen puff pastry, thawed
  • 4 eggs
  • Mixed salad leaves, to serve
Instructions:
  • Preheat oven to 220C. Heat oil in a large non-stick frying pan over medium heat. Sauté onion for 10 minutes until soft and light golden. Add sugar and cook for 5 minutes until onions are sticky and caramelized. Add spinach and cook for another 1-2 minutes until wilted. Season to taste and transfer to a bowl.
  • 1. Heat a non-stick pan over medium heat, crisp up chorizo for 5 minutes, then transfer to a paper towel-lined plate. Mix into the onion and cool completely.
  • - Line a baking tray with parchment paper and lay the pastry on top. Spread the onion mixture over the pastry, leaving a 2cm border. Fold the edges in, then make 4 shallow indents with a spoon. Bake for 15 minutes, then crack an egg into each indent. Bake for another 5-10 minutes until the pastry is crispy, eggs are cooked, and golden. Cut into quarters and serve with mixed salad leaves.
