Caramelised onion and chorizo loaded fries

Indulge in loaded fries with chorizo, caramelized onion, and oozing cheese.
Ingredients:
  • 1kg pkt frozen straight-cut chips
  • 2 red onions, thinly sliced
  • 2 chorizo, halved, thinly sliced
  • 16.00 gm brown sugar
  • 20.00 ml balsamic vinegar
  • 165g cheese
  • 1 tomato, finely chopped
  • 1 shallot, finely chopped
  • 40.00 ml drained jalapenos, finely chopped
  • 1 lime, juiced
  • 62.50 ml coriander leaves
Instructions:
  • Preheat the oven to 220C and line a large baking tray with baking paper. Spread the chips evenly on the tray and bake for 25 minutes, or until they are golden and crispy.
  • Heat a large non-stick frying pan over high heat. Sauté onion and chorizo until golden, about 10 minutes, stirring occasionally. Stir in sugar and vinegar and cook for another minute.
  • First, generously dust the chips with half of the delicious cheese. Next, add the flavorful onion mixture on top. Finally, sprinkle the remaining cheese over the chips. Bake for 5 minutes or until the cheese is perfectly melted and golden brown. Enjoy!
  • In a bowl, mix together the tomato, shallot, jalapeño, lime juice, and coriander. Drizzle over chips and season to taste.
