Chorizo and egg breakfast tacos with avocado, tomato, and cheese. A delicious and crowd-pleasing morning meal.
Ingredients:
  • 12 ounces Mexican-style chorizo sausage, removed from casing if necessary
  • 12 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 tablespoons milk, whole or whatever you have on hand
  • 12 5-inch tortillas, preferably corn and flour blend
  • 1 cup chopped tomatoes (about 2 medium tomatoes)
  • 1 avocado, chopped
  • 3 to 4 tablespoons Cotija cheese
  • 1 /4 cup chopped cilantro leaves (optional)
  • Salt and pepper to taste
  • Hot sauce (optional)
  • Lime wedges (optional)
Instructions:
  • In a large skillet over medium heat, cook the chorizo, breaking it up with a wooden spoon until completely browned. Transfer to a paper towel-lined bowl to drain.
  • Prepare the eggs: Use a paper towel to quickly wipe the skillet, leaving any remaining oil for flavor. In a medium bowl, whisk together eggs, salt, pepper, and milk. Pour the mixture into the skillet over medium-low heat. Gently stir the eggs as they cook, ensuring to scrape all sides of the skillet to create soft and creamy curds.
  • Heat tortillas in a dry skillet over medium-high heat one at a time until slightly charred on each side for about 20 to 30 seconds each. Transfer to a plate and cover with a damp paper towel. Alternatively, stack tortillas, wrap in a damp paper towel, and microwave for 30 seconds. Keep covered with the paper towel until ready to use.
  • Combine the sausage with the eggs just as they begin to form curds, allowing the sausage to heat through. Stir well and take off the heat.
  • To serve, distribute the filling evenly among the tortillas, or allow guests to customize their tacos straight from the pan. Top each taco with tomatoes, avocado chunks, crumbled Cotija cheese, and optional cilantro leaves. Season with salt and pepper to your preference. Accompany with hot sauce and lime wedges on the side.
