Irresistible light and creamy low-fat Italian tiramisu.
Ingredients:
  • 300g French Vanilla Light Fruche
  • 200g fresh ricotta
  • 40.00 gm caster sugar
  • 250mls (1 cup) boiling water
  • 3 tsp instant coffee granules
  • 80mls (1/3 cup) marsala
  • 1 200g pkt sponge finger biscuits (savoiardi)
  • 5.00 gm cocoa powder, to dust
Instructions:
  • In a medium mixing bowl, combine Fruche, ricotta, egg, and sugar. Use electric beaters to whisk for 1-2 minutes until the sugar dissolves. Set aside.
  • In a jug, mix the water, coffee, and marsala. Pour half of the mixture into a small bowl. Dip one sponge finger at a time into the coffee mixture in the bowl, then arrange in a single layer to cover the base of a 19 x 25cm, 2-litre (8-cup) serving dish. Brush any remaining coffee mixture over the sponge fingers. Repeat the dipping process with the remaining coffee mixture.
  • Evenly layer half of the Fruche mixture over the sponge fingers. Repeat with remaining sponge fingers and coffee mixture, and finish with the remaining Fruche mixture. Use a large metal spoon to smooth the top surface.
  • Evenly coat with the luxurious cocoa powder. Chill in the fridge for at least 4 hours to enhance the flavors and perfectly soften the sponge fingers before enjoying.
