Delicious Greek feta and capsicum dip - ideal for any Mediterranean meal.
Ingredients:
  • 300g Greek feta, coarsely chopped
  • 180g bought chargrilled capsicum, coarsely chopped
  • 1 small fresh red chilli, halved, deseeded, finely chopped
  • 60ml (1/4 cup) olive oil
  • 1/4 tsp freshly ground black pepper
  • Crusty bread, to serve
Instructions:
  • Combine feta, capsicum, and chili in a blender and blend until smooth. With the blender running, slowly pour in the oil and vinegar until creamy. Transfer to a serving bowl, season with pepper, cover, and chill in the fridge for 3 hours. Serve with crusty bread.
