Toasted marshmallow white cake - a spectacular dessert!
Ingredients:
  • 1 cup mini marshmallows
  • 1.67 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 cup unsalted butter, softened
  • 1 tablespoon vegetable oil
  • 0.5 cup white sugar
  • 3 tablespoons marshmallow creme
  • 3 large egg whites, at room temperature
  • 0.25 teaspoon almond extract
  • 0.67 cup buttermilk
Instructions:
  • Preheat the broiler in the oven and position a rack just a few inches below it. Prepare a baking sheet by lining it with parchment paper and gently greasing the paper.
  • Evenly scatter mini marshmallows on the baking sheet and broil until golden and toasted, approximately 30 seconds. Let cool before serving.
  • Preheat the oven to 325°F (165°C) and position an oven rack in the center. Line and lightly grease a 9-inch round cake pan with parchment paper.
  • Combine flour, baking powder, and salt in a small bowl and whisk until well mixed.
  • In a large bowl, use an electric mixer to blend toasted mini marshmallows, butter, oil, sugar, and marshmallow crème until smooth, which should take 2 to 3 minutes. Add egg whites one at a time, making sure to mix well after each addition. Incorporate vanilla and almond extracts, then gently fold in half of the flour mixture until just combined. Add buttermilk and mix until just combined. Finally, fold in the remaining flour mixture until just combined.
  • Spread the batter evenly in the cake pan.
  • Bake in the preheated oven for 35 to 40 minutes, or until the top springs back lightly when touched. Let the cake cool in the pan for 10 to 15 minutes before transferring to a wire rack to cool completely.
