Indulgent chocolate cupcakes with gooey toasted marshmallow topping.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 cups white sugar
  • 0.75 cup unsweetened cocoa powder
  • 1.5 teaspoons baking soda
  • 0.75 teaspoon baking powder
  • 0.75 cup warm water
  • 2 large eggs, lightly beaten
  • 0.5 cup whole milk
  • 0.33333334326744 cup unsalted butter, melted
  • 0.25 cup sour cream
  • 0.75 teaspoon pure vanilla extract
  • 12 large marshmallows
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a muffin tin with 12 paper liners.
  • In a large bowl, combine flour, sugar, cocoa powder, baking soda, baking powder, and salt. Mix in warm water, eggs, milk, butter, sour cream, and vanilla extract until the batter is smooth. Fill muffin cups halfway with the batter.
  • Bake the cupcakes in the preheated oven for 15-18 minutes or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool for about 5 minutes.
  • Preheat the oven's broiler.
  • Insert 1 marshmallow upright into the center of each cupcake.
  • Return cupcakes to the oven and broil, closely monitoring, until marshmallows are golden brown and slightly puffed, for 10 to 30 seconds. Gently press marshmallows onto cupcakes to fully cover the top using the back of a spoon.
