Toffee apples with dark chocolate

Indulge in irresistible toffee apples with a decadent dark chocolate drizzle.
Ingredients:
  • 8 small red apples, stems removed
  • 660g caster sugar
  • 250ml water
  • 1 tsp white vinegar
  • 1/2 tsp red food colouring
  • 100g 70% Cocoa Dark Chocolate
  • Chopped nuts, to decorate
Instructions:
  • Prepare the baking tray by greasing and lining it. Wash the apples in warm water and make sure to dry them completely. Put the apples on the tray and gently insert ice-block sticks into the cores, being cautious not to push them all the way through.
  • Combine sugar, water, and vinegar in a saucepan. Heat gently until the sugar dissolves. Increase heat to boil, then simmer without stirring until the toffee reaches 150C on a sugar thermometer or hard-crack stage. To check without a thermometer, drop a teaspoon of toffee into cold water - it's ready once it hardens. Avoid stirring; use a wet pastry brush on the pan's sides to prevent crystallization.
  • Remove the toffee from the heat and let it rest for 30 seconds until the bubbles subside. Stir in the coloring and swirl gently. Dip apples into the toffee, letting any extra drip off. Arrange the apples on the tray and let them cool until set.
  • Melt the chocolate in a heatproof bowl over simmering water, making sure the bowl doesn't touch the water. Let it cool for 10 minutes. Transfer the melted chocolate to a snaplock bag and snip off a small corner. Use the bag to pipe the chocolate onto the toffee apples for decoration, then sprinkle with nuts. Chill in the fridge for 10 minutes or until the chocolate sets.
