Ingredients:
  • 250.00 gm water
  • 15 small Red Delicious or Pink Lady apples, washed, dried
  • 900.00 gm white sugar
  • 1.25 gm cream of tartar
  • 2 tsp red liquid food colouring
Instructions:
  • Skewer an apple with a stick. Prepare 2 baking trays with baking paper. Combine sugar and water in a heavy-based saucepan over low heat. Stir until sugar dissolves. Let it come to a boil without stirring. Clear sugar crystals from the pan with a wet pastry brush. Add cream of tartar and food coloring, and mix well.
  • Lower the heat and gently simmer the toffee for 20 minutes until it reaches the hard crack stage. Test by dropping 1 teaspoon of toffee into a glass of ice-cold water. Take out the solidified toffee, bend it – it should crack easily, not feel sticky. Once it reaches this stage, remove from heat promptly.
  • Once the toffee stops bubbling, dip one apple into the toffee, tipping the pan to coat the apple, especially around the stick. Transfer the coated apple to the prepared baking tray. Repeat the process with the rest of the apples. Let them set at room temperature.
