Tofu whip with kiwifruit & melon liqueur syrup

Ingredients:
  • 300g silken tofu, drained
  • 300ml thickened cream
  • 8.80 gm vanilla extract
  • 40g icing sugar
  • 4 kiwifruit, peeled and sliced, (reserve 1 kiwifruit to decorate)
  • 60g caster sugar
  • 60ml liqueur
  • Mint leaves to decorate
Instructions:
  • Whip tofu, cream, vanilla extract, and icing sugar with an electric beater until smooth and airy. Chill covered in the refrigerator.
  • Place 3 ripe kiwifruit, caster sugar, and liqueur in a blender. Blend until silky smooth. Strain the mixture through a fine sieve to remove any pulp.
  • To plate, dollop tofu whip into serving dishes and drizzle with syrup. Garnish with extra kiwifruit slices and fresh mint leaves.
