Tom Cruise-inspired white chocolate coconut Bundt cake - moist and flavorful with a festive touch of coconut.
Ingredients:
  • 3 cups cake flour
  • 0.75 teaspoon salt
  • 1.5 teaspoons baking powder
  • 1.5 cups white sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 0.5 teaspoon almond extract
  • 1.25 cups sour cream, at room temperature
  • 1 cup sweetened shredded coconut
  • 1 cup finely chopped white chocolate
  • 1 (8 ounce) package cream cheese, at room temperature
  • 0.25 cup unsalted butter, softened
  • 1 pinch salt
  • 2.5 cups powdered sugar
  • 2 tablespoons heavy cream
  • 2 cups sweetened shredded coconut
Instructions:
  • Assemble all your ingredients.
  • For the coconut cake: Preheat the oven to 350°F (175°C) and prepare a 10-inch Bundt pan by greasing and flouring it.
  • In a large bowl, mix together flour, salt, and baking powder; set aside.
  • In a large bowl, use an electric mixer to beat sugar and butter until light and fluffy, about 5 minutes. Add whole eggs one at a time, beating well after each addition. Mix in vanilla and coconut extracts along with sour cream until combined.
  • Combine the flour mixture just until incorporated, then gently fold in the flaked coconut and white chocolate chips.
  • Spread the batter evenly in the prepared pan using the back of a spoon.
  • Bake in the preheated oven until a toothpick comes out clean, for roughly 1 hour and 25 minutes. Let the cake cool in the pan for 20 minutes, then transfer to a wire rack to cool fully, approximately 2 hours.
  • Prepare the frosting by combining cream cheese, butter, vanilla, and salt in a medium bowl. Use an electric mixer to beat until smooth. Gradually blend in the powdered sugar until fully incorporated. Pour in the cream and beat until the mixture is light and fluffy, which should take around 1 to 2 minutes.
  • Cover the cake in frosting and gently sprinkle coconut all over.
