Whip up a delicious one-pot pasta dinner in 30 minutes.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 red onion, thinly sliced
  • 6 shortcut bacon rashers, trimmed, chopped
  • 3 garlic cloves, thinly sliced
  • 44.40 gm tomato paste
  • 510.00 gm salt reduced chicken style liquid stock
  • 250g linguine
  • 250g cherry tomatoes, halved
  • 75.00 gm basil pesto
  • 187.50 ml mixed olives
  • 40g baby rocket
  • Shaved parmesan, to serve
Instructions:
  • In a large heavy-based saucepan or flameproof casserole dish, heat oil over medium-high heat. Sauté onion and bacon for 5 minutes until onion softens. Stir in garlic, then add tomato paste, stock, and 1 cup cold water. Cover and bring to a boil.
  • Add linguine to the pot and bring to a lively boil. Lower heat to medium and let it simmer uncovered for 15 minutes until the pasta is just tender and the sauce has thickened, stirring every 5 minutes.
  • Take the pot off the heat and gently mix in the tomato, pesto, and olives. Season with freshly ground pepper. Serve with a garnish of baby rocket and a sprinkle of parmesan on top.
