Classic pasta salad with feta, basil, and tomatoes - simple and delicious.
Ingredients:
  • 200g dried elbow pasta
  • 150g green beans, trimmed, halved lengthways
  • 40.00 ml red wine vinegar
  • 36.40 gm extra virgin olive oil
  • 11.80 gm dijon mustard
  • 400g can four bean mix, drained, rinsed
  • 3 tomatoes, roughly chopped
  • 100g fetta, crumbled
  • 125.00 ml shredded fresh basil leaves
  • 1/2 small iceberg lettuce, cut into small wedges
Instructions:
  • Prepare pasta according to package instructions, tossing in green beans for the final minute of cooking. Drain and rinse under cold water before draining well. Serve in a spacious bowl.
  • Whisk vinegar, oil, and mustard in a jug until emulsified. Season generously with salt and pepper to taste.
  • Combine canned beans, tomato, fetta, basil, and lettuce with the pasta. Drizzle with dressing and mix well. Serve.
