Whip up a quick and delicious pasta dinner in no time!
Ingredients:
  • 375g Smart Pasta High Protein Low Carb Spirals
  • 350g mixed tomatoes, thickly sliced
  • 75g pitted kalamata olives, quartered
  • 62.50 ml shredded basil leaves, plus extra leaves to serve
  • 2 tsp drained Brand Baby Capers
  • 56.88 gm Extra Virgin Olive Oil
  • 21.00 gm lemon juice
  • 1 garlic clove, crushed
  • 100g drained Persian feta, crumbled
Instructions:
  • Prepare pasta in a saucepan of boiling water seasoned with salt as per package instructions. Once cooked, strain.
  • In a large bowl, mix together tomatoes, olives, basil, capers, oil, lemon juice, and garlic. Add pasta and feta, toss to combine. Serve on plates and garnish with extra basil.
