Tomato and basil soup

Cozy up this winter with a simple and delicious tomato basil soup.
Ingredients:
  • 18.20 gm olive oil
  • 1 large brown onion, chopped
  • 2 garlic cloves, crushed
  • 300g sebago potatoes, peeled, chopped
  • 600g tomatoes, chopped
  • 44.40 gm tomato paste
  • 765.00 gm chicken style liquid stock (see note)
  • 62.50 ml fresh basil leaves
Instructions:
  • In a large saucepan over medium-high heat, heat oil until shimmering. Add onion and garlic, stirring occasionally, for 3 minutes until onion softens. Stir in tomatoes, potato, and tomato paste, then cook for an additional 1 minute.
  • Pour in the stock and generously sprinkle with pepper. Cover the pot and bring the mixture to a boil. Lower the heat to medium-low and let it simmer for 15 to 20 minutes, until the potato is tender. Allow it to rest for 5 minutes before serving.
  • Add fresh basil leaves to the mixture. Blend the ingredients in batches until you achieve a smooth texture. Serve the delicious dish.
