Tomato Spinach and Basil Soup

Long-lasting soup with option to swap dried basil for fresh; stores up to 1 month.
Ingredients:
  • 1 large yellow onion, chopped
  • 1 teaspoon minced garlic
  • 1.5 cups milk
  • 1 (28 ounce) can tomato puree
  • 1 tablespoon white sugar
  • 2 cups fresh spinach, torn
  • 0.25 cup chopped fresh basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 1 tablespoon grated Parmesan cheese
Instructions:
  • In a large saucepan over medium heat, melt butter. Saute onion and garlic for 3 minutes. Add milk and cook for 2 minutes, stirring occasionally. Stir in tomato puree and sugar. Cover and bring to a boil over high heat. Reduce heat to low, simmer covered for 5 minutes. Add spinach, basil, salt, and pepper. Simmer uncovered for 2 minutes, stirring occasionally. Optional: sprinkle with parmesan cheese before serving.
