Tomato, chorizo and bean soup

Fiber-rich winter soup - quick and cozy!
Ingredients:
  • 2 chorizo sausages, cut into 1cm pieces
  • 575g Napoletana pasta sauce
  • 765.00 gm chicken style liquid stock
  • 400g can cannellini beans, drained, rinsed
  • 100g baby spinach
  • 82.50 ml fresh basil leaves
  • Ciabatta bread, sliced, toasted, to serve
Instructions:
  • In a large saucepan over medium-high heat, sizzle chorizo in hot oil until golden and crispy, for about 3 to 4 minutes. Remove any excess oil from the pan, then pour in the sauce and stock. Bring to a boil.
  • Start by gently mashing half of the beans in a bowl. Transfer all the beans to the soup and simmer on low heat for 10 minutes with the lid on. Next, add the spinach and stir until wilted. Serve the delicious soup in bowls, garnish with fresh basil leaves, and accompany it with toasted ciabatta. Enjoy!
