Energetic Mexican beans elevate this budget-friendly tomato soup with hearty and delicious flavors.
Ingredients:
  • 1020.00 gm vegetable liquid stock
  • 400g can diced tomatoes
  • 425g can mexe-beans
  • 8 slices bread
  • 125.00 ml tasty cheese, grated
  • Chives or parsley, to serve
Instructions:
  • Preheat grill on high and line the grill tray with foil. In a large saucepan over high heat, heat olive oil. Sauté onion and garlic until onion is tender, approximately 1-2 minutes.
  • Combine vegetable stock and diced tomatoes in the pot, let it simmer for 5 minutes (blend tomato mixture for a smoother texture, if desired). Add mexi beans, season to taste, and simmer for another 5 minutes.
  • As you wait, place the bread slices on the grill tray. Toast one side until golden. Flip the slices and evenly sprinkle tasty cheese on top. Grill for 1-2 minutes until the cheese melts perfectly.
  • Garnish soup with chives or parsley and serve with cheese toast.
