Delicious and cozy Italian tomato bread soup made with crusty bread, tomatoes, garlic, onions, stock, and olive oil.
Ingredients:
  • 2 cups diced yellow onion
  • 4 tablespoons extra virgin olive oil, divided 2 Tbsp and 2 Tbsp
  • 5 cloves garlic, minced
  • 2 28-ounce cans whole peeled tomatoes (or about 4 pounds of fresh, ripe tomatoes, that are blanched, peeled, and chopped*)
  • 3 bay leaves
  • 2 cups of chicken stock
  • 1 1/2 cups of cubed rustic bread, 1 1/2-inch cubes (about 2 to 3 thick slices of Italian loaf), day old is best
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt, less or more to taste
  • Freshly grated Parmesan cheese and chopped fresh basil or parsley for garnish
Instructions:
  • In a large pot over medium heat, warm up 2 tablespoons of olive oil. Cook the diced onions gently until softened and starting to caramelize, for about 10-12 minutes. Stir in the minced garlic and cook for an additional minute.
  • Combine crushed tomatoes, chicken stock, bay leaves, and dried oregano in the pot with the onions. Simmer over low heat for 20 minutes, ensuring a gentle bubble. Remove any tough stem ends or rogue tomato skins. Meanwhile, start prepping the bread croutons for the next step.
  • Toast the croutons on the stovetop: Heat 2 tablespoons of olive oil in a sauté pan over medium heat. Add the cubed bread, coat with oil, and spread in a single layer. Cook without moving until golden browned on one side, then flip with tongs. Once at least two sides are browned, remove from heat.
  • After simmering the tomatoes for 20 minutes, gently incorporate the golden-brown croutons into the soup. Allow them to cook for an additional 5 minutes. Turn off the heat, cover the pan, and let the flavors meld for 10-15 minutes.
  • Remove the bay leaves, then blend half of the soup until lightly puréed, leaving some chunks. Top with freshly grated Parmesan and chopped fresh basil or parsley before serving.
